Kake: Served in hot broth.

Yutsuki: Noodles served in hot water with dipping sauce.

Nuru: Lukewarm broth for those who prefer it.

Koro: Cold broth, similar to “bukkake udon,” originating from Tajimi City in Gifu Prefecture.

Hiyashi: Cold noodles with dipping sauce.
